Emilio Barbieri, lo chef, gestisce assieme alla moglie Rita Antonella Ronchetti, sommellier professionista A.I.S., lo stellato Strada Facendo, dal 1994.

«La mia storia parte da un piccolo paese della provincia reggiana ‘Salvaterra’. Galline, conigli, il maiale, l’orto, la sfoglia tirata col mattarello dai miei genitori, casari da generazioni. Ritratti d’Emilia. La mamma Sarita esperta cuoca, cucinava per feste e prestigiosi eventi legati al caseificio e al paese, come l’annuale cerimonia del maiale. Questo mi ha aiutato ad assemblare profumi e sapori, identità dei miei piatti, senza toglier nulla all’innovazione odierna che, avvalendosi di tecnologia, ne consente una continua sperimentazione. A bordo, a parer mio, il miglior modo di intendere la cucina, è dettato dalla semplicità, dal rispetto per le stagioni, da quell’estro che permette abbinamenti talvolta inconsueti, quali frutta, verdure e spezie… Ecco i modi del navigare verso nuovi orizzonti. Allora perché non una pizza… fredda, che sposa il profumo di mare, alla freschezza del raccolto».

A melting pot of tradition, innovation and creativity.«My story starts in a small town in the ‘Salvaterra’ province in Reggio Emilia. Chickens, rabbits, a pig, the vegetable patch, dough rolled out by my parents, experienced cheesemakers. Portraits from Emilia. My mum Sarita, an expert cook, cooked meals for festivals and important events linked to cheese-making and the town itself. Such as the yearly pig ceremony. This helped me to build up fragrances and flavours, the identity of my dishes – nothing against today’s innovation which, with the help of technology, allows for continual experimentation. EMILIO BARBIERI
Nasce nel 1950 a Salvaterra, un piccolo paese della provincia reggiana. Nella metà degli anni sessanta la famiglia Barbieri si trasferisce a Modena e rileva il Bar Mazzini, locale storico dell’omonima piazza. Successivamente si sposta a Sassuolo per la conduzione dell’Albergo Ristorante Regina. Nel 1967 il ristorante viene premiato da Luigi Carnacina e dall’Accademia Italiana Della Cucina Delegazione di Modena,con coppa e medaglia d’oro. Dopo il servizio militare, Emilio è il primo a Modena a proporre una piccola ristorazione al Caffè Dei Portici da lui aperto, finchè assieme alla moglie Rita Antonella, inaugura lo “Strada Facendo”, in via Emilia ovest 622.
Born in 1950 at Salvaterra, a little town in the province of Reggio Emilia. In the mid-sixties the Barbieri family moved to Modena and took over the Mazzini Bar, an historic bar of the namesake square. Then they moved to Sassuolo to manage the hotel and restaurant Regina. In 1967 the restaurant was awarded a cup and gold medal by Luigi Carnacina and by the Italian Kitchen Academy, delegation of Modena. After his military service Emilio first started a small restaurant at his Caffè Dei Portici, until he and his wife Rita Antonella, inaugurated the “Strada Facendo”, in Via Emilia ovest nr.622.
