GEORGIANNA CHILIADAKI E NIKOS ROUSSOS SONO I DUE CHEF CO-PROPRIETARI assieme al manager Argyro Chiliadaky, del Ristorante Funky Gourmet di Atene. I tre hanno pienamente collaborato dal primo stadio dell’immaginazione e della formulazione del loro particolare concetto di ristorante, all’attuale sistemazione e gestione del Funky Gourmet. «La nostra filosofia, è meglio descritta dal nome del ristorante. Noi crediamo in una cucina che sia Funchy, di tradizione riadattata all’oggi e, Gourmet, secondo il gusto più raffinato. Un’espressione giocosa, non convenzionale, una cucina di avanguardia capace di evocare emozioni stimolandone i ricordi. Sapori originali ben calibrati si adattano perfettamente alla ricercata teatralità del manufatto». A descrivere appieno questa filosofia ci sono essenzialmente l’insalata greca, i cui ingredienti, pomodori, cetrioli, olive, formaggio feta, incapsulati si traducono in bianca granita; il tortino di bottarga della regione di Mesologgi, abbinato al cioccolato bianco, o il braccialetto di strato di latte, reminescenza del classico baklava, dove la pasta fillo è sostituita da un velo di latte, presentazione ad effetto, “un braccialetto di bronzo”. Funky Gourmet, si è affermato velocemente. Nel 2014 ottiene la seconda Stella Michelin.

GEORGIANNA CHILIADAKI AND NIKOS ROUSSOS ARE THE CHEFS AND OWNERS – alongside manager Argyro Chiliadaky – of the Funky Gourmet Restaurant in Athens. The three have worked together from the outset to imagine and formulate their singular restaurant concept, resulting in the present-day configuration and function of the Funky Gourmet. «Our philosophy can best be described by the name of our restaurant. We believe in cooking that’s Funky, traditional food adapted for the present, and Gourmet, with the most sophisticated taste. An unconventional, playful take on food, an avant-garde approach that can stimulate emotions and awaken memories. Original and well-judged flavours, perfectly suited to the exquisite theatricality of the presentation». This philosophy is fully expressed in the Greek salad, whose ingredients – tomatoes, cucumber, olives and feta – are encapsulated in a white granita; the tortino of Mesologgi bottarga with white chocolate; or the bracelet of milk layers, reminiscent of classic baklava but with the filo pastry replaced by a fine covering of milk, and presented, indeed, as a “bronze bracelet”. Funky Gourmet was quick to find fame. It gained its second Michelin star in 2014.
