Three michelin-starred chef mauro colagreco is also a unesco ambassador for promoting and focusing on biodiversity

Mauro Colagreco, chef patron of the three-Michelin-starred Mirazur restaurant in Menton, has created a cuisine that reflects his environmental values, using nature as a source of inspiration for his dishes.

Mauro Colagreco is increasingly aware of the interdependence of all living things on earth and in the oceans, which is why his research is continuous.

The chef and his team source their produce from small businesses and local producers who are known for their environmentally responsible initiatives. In addition, Mauro has been running his own biodynamic farming project on his five-hectare vegetable garden for the past ten years. The land is respected, rested and reseeded, enriching the soil and allowing the crop to develop organically.

Prawns, local mushrooms and pistachios are very popular, as are nasturtium flowers and sea ragout, vanilla and lobster, or the cherry and elderberry dessert.

In his menus, he uses ingredients that he plants and grows on his land, using nature as a learning space for himself and his team, discovering how to synchronise with the cycles of the ecosystem and the rhythms of the seasons.

At Mirazur, these ingredients, combined with a strong creative identity and a bold combination of flavours, have earned him his latest three Michelin stars. In the same year, 2019, Mirazur was awarded the best restaurant in the world at the World’s 50 Best Restaurant Awards. In addition to the land, Mauro is passionate about protecting the oceans.

Mauro Colagreco owns the Mirazur restaurant in Menton on the French Riviera. The restaurant offers a menu that varies depending on the day of the week and costs 450 euros per person.

He has been a strong supporter of sustainable fishing initiatives and has found new solutions to remove all single-use plastic from his kitchen and restaurant building. Mirazur was the first restaurant in the world to be certified ‘Plastic Free’ in 2020 and was awarded a Green Star by the Michelin Guide in the same year.
